Super Easy Chestnut Cake
What can you make with a half a jar of cooked and peeled chestnuts? Why half a chestnut cake, of course 😉 My Super Easy Chestnut Cake is just that: super easy to make in your Thermomix. Just pop 6 little ingredients in the bowl, mix for a minute, bake for 25 minutes and hey presto! In less than a half hour there you are with a fork in your hand 😉
Since I only had a half-jar of chestnuts and I didn’t know how many chestnuts were in a full-sized tin as in the original recipe, I made it anyway with what I had, and the results were absolutely melt-in-your-mouth delicious! It’s a perfect after-school snack for my neighbour’s girls and so kid-friendly, I should have waited to make it with them 😉
In addition, it’s gluten free and lactose free <3
Equipment
- TM31, TM5 or TM6
- cake tin with removable bottom
Ingredients
- 1 tin or jar whole cooked and peeled chestnuts 400 g to 500 g drained weight
- 150 g sugar
- 180 g butter salted or unsalted, cut into chunks
- 3 eggs
- 1 ½ tsp baking powder
- 1 ½ tsp vanilla extract
Instructions
- Put the chestnuts in your Thermomix bowl and mix 30 seconds/Speed 5. Scrape sides of bowl with spatula.
- Add remaining ingredients and mix 30 seconds/Speed 7.
- Pour batter into your buttered cake tin and bake 25 to 30 minutes at 200° C.
- Serve warn or cold with whipped cream, custard or just a good cup of coffee or tea.

I see that yr chestnut cake does not ave any flor. It that’s what it was supposed to be or have you forgotten abt the flour in the recipe?. Thank you
Thanks for this comment, Clarice. As you can see in the photo of my batter, the butter was well mixed in and perhaps it was at something close to room temperature (except in summer, my butter is almost always in a ceramic butter dish somewhere out on the worktop). The great thing about Thermomix is that you can do things like mix a few more seconds or cook another minute or two to ensure the results *you* want – even with guided cooking!
So just how delicious was your Super Easy Chestnut Cake?
I would advise making sure the butter is at room temperature before adding it. I had to mix it a bit more to break the butter down. I haven’t tasted it yet as it’s just out of the oven but the batter was yummy and the cake looks lovely.
