Fat-Free Tuna Salad
This Fat-Free Tuna Salad recipe came to mind as I stood in my kitchen wondering what I was going to have for lunch. It’s summer here in France, and fresh herbs and fresh vegetables abound, especially in my own garden. I wanted something that had some protein, loads of veg, and no fats yet still packed in lots of flavour. My protein choice settled on a tin of white albacore tuna packed in water, and I went from there to my veg drawer via the garden, and came up with a tasty, filling lunch. Instead of loading it with mayonnaise as in a traditional tuna salad, I got sneaky and used the tomato flesh to both moisten and bind the ingredients š Vary it according to the herbs that are in season, in your vegetable garden or on your windowsill, and, of course, to your taste. I hope you’ll like it!
- 2 large ripe tomatoes
- A few sprigs of parsley, leaves only
- A few sprigs of basil, leaves only
- 1 small onion, cut in half
- 1 cup zucchini/courgette - OR - cucumber, in large chunks
- 100 g white albacore tuna in water, drained
- 1/2 tsp apple cider vinegar
- salt and pepper to taste
- 2 cups mixed greens or your favourite type of lettuce
- 2 Tbsp apple cider vinegar or to taste
- more fresh herbs to garnish
- Cut off the tops of the tomatoes to form lids. Scoop out the flesh into the Thermomix bowl. Reserve the lids and the empty tomatoes.
- Place the lid on your Thermomix. With the blades running at Speed 7, drop the herbs through the hole in the lid and turn off. Scrape sides of bowl with spatula.
- Add onion, zucchini/courgette or cucumber, ACV, salt and pepper and chop 3 - 5 seconds/Speed 5.
- Place mixed greens in a large bowl and top with empty tomatoes. Fill tomatoes with tuna salad and replace their lids.
- Sprinkle ACV over greens and garnish your plate with more fresh herbs.
- Vary your herbs according to what's in season, what's in your garden or on your windowsill, and of course to your taste. Tarragon would be nice. Herbs are packed with flavour and make our food interesting!
- Be generous with your salt and pepper, or use a flavoured salt such as sea weed salt. You need to bring out the flavour from the courgette or cucumber to jazz this salad up.
