I guess I’d better not tell you, Nora, that we have a fabulous organic goats’ cheese supplier a few minutes from our house near Sancerre… Céline prepares her crottins de chavignol by hand each week, using the milk from her herd of happy, outdoor-reared goats. I was a tad disappointed just last week because her girls are rather pregnant and have stopped producing milk until they give birth, so I’m temporarily out of my favourite cheese 🙁 You must come for a visit the next time you come home to France 🙂
Oh my! So many great recipes to choose from. I must say the mini choux with the thyme infused goats cheese mousse is particularly tickling my tastebuds! I have just bought some fantastic goats cheese in Fallon & Byrne in Dublin, I miss French cheese so much!
