Thermomix Christmas Gift Ideas including Sally’s White Chocolate & Strawberry Rocky Road
I have been really enjoying forming a team of Independent Thermomix Demonstrators here in the UK. One of the most rewarding aspects is dealing with other people who love Thermomix and appreciating their different personalities. And then there’s the wonderful bonus of appreciating the recipes they create, too, such as this luscious White Chocolate and Strawberry Rocky Road 😉
One of my team members is very creative and uses her Thermomix several times a day, cooking for up to 40 people on the weekends and still finding time to make lovely gifts to take to her demonstrations. I don’t know how she does it, but she does it well! Here is one of the most mouth-watering recipes she has come up with yet. It’s perfect for taking along as a host gift to a Christmas party, or just make up several batches and give them as homemade foodie gifts. Enjoy!
SALLY’S WHITE CHOCOLATE & STRAWBERRY ROCKY ROAD
Recipe by Sally Porter, Independent Thermomix demonstrator in the UK. Makes two generous slabs or eight mini slabs and a dozen or so round “mendiants.”*
Ingredients
800g White Chocolate
225g Halved White Marshmallows
195g Sweetened Dried Cranberries
50g Freeze-dried Strawberries**
Method
- Break white chocolate into pieces and put in TM bowl. Chop on speed 10 for 3-4 seconds.
- Scrape down the sides of the TM bowl and melt chocolate for 4 mins/50 degrees C/Speed 3.
- With the blade running on Speed 1/Reverse Blade Function (no heat), add the marshmallows and cranberries and half of the strawberries.
- Pour into 2 x 25cm Loaf tins lined with baking paper and top with the remaining strawberries – or – use a silicone mini-loaf tin to make eight small bars and drop the rest by heaping teaspoonfuls into rounds onto a silicone mat or a piece of baking paper to make “mendiants.”* Place in the fridge for 1 hour or until set.
Madame Thermomix’s Top Tricks and Tips:
- Wrap in Cellophane and tie ends with ribbon for great gifts!
- Be sure to mix in the marshmallows and fruits with the blade running slowly on Reverse Blade Function, no heat, so as not to chop the fruit or melt the marshmallows.
- Don’t add any tiny crumbs or powdered strawberries, your chocolate will turn a brownish pink instead of a lovely white. Just look at the difference in the photos 😉
- I used only half of the chunky bits to the full amount of chocolate and found that it was more than enough. You’ll undoubtedly want to make this recipe several times and you can decide on how much filling you like in with your chocolate 😉
A bit of background:
*”Mendiants” are a traditional Christmas sweet or candy in France. The word means “beggars” and it originally represented four types of dried fruit and nuts offered to monks who lived from charitable offerings. The sweet has evolved over the years to become a disk of chocolate topped with dried fruit and nuts. Use your imagination with Sally’s lovely recipe and modify your fillings/toppings to suit your own taste and whatever is in your larder.
