Fast and Easy, No Fat Gazpacho
What do you do when you’re on a diet and can’t stand the idea of another salad, but salad ingredients are about all you’ve got in the fridge? How about Gazpacho? Great idea! Just what I need. Full of taste, satisfying, low calorie. Like a savoury smoothie.
Thermomix is the perfect tool for making gazpacho. Its powerful motor and brilliantly designed blade ensure that all the tomato, pepper and cucumber seeds are blended into oblivion!
There are lots of different recipes for gazpacho, but I just reached into my refrigerator and into my bowl of big, beautiful tomatoes and followed my instinct. My result is a bit browner than it is red, but it tasted fabulous. Here’s what I did:
Madame Thermomix’s No Fat Gazpacho
There’s no olive oil in this über simple version of the Spanish classic cold soup. Start with some really ripe tomatoes and throw in what you can find in your fridge! Makes about a litre.
Ingredients (vary according to the season and the contents of your refrigerator or larder)
1 clove garlic, peeled in the Thermomix, of course!
2 big, ripe beefsteak tomatoes, quartered
a 3-inch piece of cucumber (peel to preserve colour or leave skin on for more taste)
¼ of a sweet pepper (red, green or yellow)
1 small shallot or pearl onion, peeled
optional: a small piece of hot chilli pepper
Salt and pepper to taste
Method
- Peel the garlic clove 4 seconds/Reverse Blade Direction/Speed 4 ½. Discard skins.
- Add all other ingredients to Thermomix bowl. Blend 2 minutes/Speed 10. Serve in a glass or bowl, garnished if desired with herbs and a dash of paprika.
That’s it! Fast, easy, healthy and delicious!
