As you may know, Dear Reader, if you follow me on Twitter, that I tweet about Thermomix in an effort to raise public awareness of my best friend in the kitchen. Recently one of my followers remarked that I was always tweeting about Thermomix soup and that any old pan and a blender could do as well.

When I recovered sufficiently from these shocking words to be able to think clearly (perish the thought – a pan and a blender?), I tweeted back a short list of things besides soup that I had made in my Thermomix in the past few days. But in actual fact, my husband and I do use the Thermomix on a regular basis for making soup, because it is the one appliance that in our opinion can make fantastic soup out of any ingredients – first time, every time. Consistent results are one of Thermomix’s foremost benefits, for home cooks and professional chefs alike.

So when my ThermoHubby rummaged through the refrigerator and made this luscious, creamy and oh-so-smooth Asparagus soup for lunch the other day, I just had to share it with you. The intense flavour of the asparagus needs no help from stock or garlic to create depth, so we make it with plain water and a fragrant shallot or small onion. A potato (or a handful of leftover steamed rice) as thickener, a bit of salt and pepper to taste, a good amount of time blending the fibrous stalks and there you have it, a gorgeously smooth and creamy asparagus soup. And the best thing about asparagus soup in the Thermomix is that it’s a real waste-buster because once you’ve steamed asparagus in the Varoma as a vegetable accompaniment for instance, you can transform any leftover woody stalks into a really smooth soup. No waste!

This soup is a brilliant showcase for Thermomix and its many time- and effort-saving functions. All the vegetables are chopped together in just a few seconds, and then we see Thermomix’s fantastic “soft start” safety feature as we cook and blend our boiling hot liquid. Amazing! And you can’t beat it as a Thermomix waste-busting showcase, either. Just use your woody stalks instead of throwing them away!

Ingredients
1 shallot or small onion, peeled and quartered
1 medium potato, quartered – or – about 50 g leftover cooked rice
300 g asparagus stalks, cut into 2-cm pieces (you can use only woody stalks and get a beautiful smooth soup, too)
15 g olive oil or butter (optional; Thermomix’s constant gentle stirring lets you sauté with no added oils or fats)
water or stock
salt and pepper to taste
cream to finish (optional)

Method

  1. Place or weigh shallot, potato or rice, asparagus and olive oil (if using) into the Thermomix bowl. Chop 5 seconds/Speed 5. Scrape sides of bowl with spatula. Sauté 100° C/3 minutes/Speed Spoon.
  2. Add water or stock to the 1-litre mark on the side of the bowl, season with salt and pepper and cook 100° C/12 minutes/Speed 1. Check seasoning and adjust.
  3. Now Cook and Blend 100° C/2 minutes/Speed 10 to beautifully purée the stalks as you finish cooking your soup. Finish with cream if you wish and serve with some delicious bread made in your Thermomix, of course.
