The North Yorkshire Chronicles, Part Four: Of Chorizo and Risotto
I close my eyes and take a bite. The slightly smoky, more than peppery, piquant flavour immediately transports me not to Spain, but to… North Yorkshire. Sorry? You read right, North Yorkshire.
One of the things I have discovered during our two trips to North Yorkshire that I really enjoy is quite startling perhaps but just as good as the original: Yorkshire Chorizo. A fully cured sausage made in North Yorkshire containing British Pork, Yorkshire Chorizo comes in “Original” and “Picante” versions which are both delicious and terribly more-ish. Either one can be sliced and eaten without cooking or used in your favourite recipe. And that’s exactly what I did here.
I had been out foraging for wild mushrooms that morning and brought back a bumper harvest of bolete. Their rich, deep taste is perfect in risotto and I ventured that the taste of the Picante Yorkshire Chorizo would complement it beautifully.
So out came my trusty Thermomix and in went onion, celery, Arborio rice, white wine, chicken stock and chopped wild mushrooms. At the end of the cooking time I stirred in some fresh tarragon from the garden to enhance the mushroom taste, some Pecorino Romano cheese previously grated in the Thermomix, and several slices of Picante Yorkshire Chorizo. A few more slices served as a tasty and colourful garnish.
I was certainly right about the Picante Yorkshire Chorizo complementing the wild mushroom flavour. My Thermomix Wild Mushroom and Picante Yorkshire Chorizo Risotto was deep, rich and – thanks to the gentle cooking and stirring by the Thermomix – very nice and creamy. ThermoHubby and I made short work of it!
