Happy Hallowe’en!
I couldn’t resist making these when I saw the original photo on epicurious.com…
I needed to use up some more of the luscious windfall cooking apples I picked up in Tongham Wood so I made some apple muffins. Then I decorated them to look like dastardly eyeballs, inspired as I said by Clare Crespo’s Eyeball Cupcakes from her book “HEY THERE, CUPCAKE! 35 Yummy Fun Cupcake Recipes for All Occasions.” A bit of filtering in PhotoScape and voila! Fit for a haunted house.
